Restaurant Dinnerware in Miami and South Florida: A Sourcing Guide

Miami's restaurant scene moves fast. New openings, seasonal menus and a long outdoor dining season put real pressure on dinnerware. This guide covers what South Florida restaurants should look for, and how ordering from Annamis works from the US.

We already supply restaurants in the US, including Queen Miami Beach. Everything below applies to Miami-Dade, Broward and Palm Beach, and to restaurants across the country.

Design for the light

South Florida light is bright and warm, and a lot of dining happens outdoors or beside large windows. Flat, bright white plates can glare in that light and wash out a dish in photos. Warmer and deeper finishes, like amber, celadon, sand or charcoal, hold their color in strong daylight and still look rich under low evening lighting. Reactive glazes help here: color pools and breaks across the surface, so the plate has depth in any light.

If your room changes from bright lunch service to dim dinner service, test samples at both times of day before you decide.

Built for heat, humidity and volume

Outdoor terraces, brunch service and long weekend nights are hard on dinnerware. Look for a vitrified body that doesn't absorb moisture, a glaze sealed at firing, and rims that resist chipping when plates are stacked and carried fast. Annamis porcelain is double-fired and fully vitrified; our Diamond stoneware is fired at 1200–1250°C, fully glazed, with low water absorption (2–3%). Both are safe for commercial dishwashers, standard ovens and microwaves. See our commercial dinnerware buyer's guide for the full checklist.

Match the dinnerware to the concept

Miami covers everything from raw bars and sushi counters to Latin grills, Mediterranean terraces and tasting menus. Seafood and crudo often look best on deep blues, greens or pale celadon. Grilled meats and warm sauces sit well on earthy ambers and charcoal. For sharing plates and small-plate menus, a mix of shapes from one family keeps the table coherent. How ordering works from the US

Pricing in dollars. US orders are quoted in USD, with a price list per Selection once we understand your menu and quantities.

Minimum order. US orders start at $10,000 plus shipping.

Samples. Sample boxes ship free to US restaurants, so you can check weight, glaze and finish in your own service before ordering.

Lead times. These depend on the collection and shipping route. We confirm them with your quote, so start the conversation well before an opening or menu launch.

Quantities. A common starting point is three times your cover count per plate type, plus a reserve for breakage. Our guide to how many plates a restaurant needs walks through the numbers.

Bespoke pieces

For a signature dish, we can develop a custom shape or glaze with your chef. Custom shapes are made in runs of 150–200 units per commission; see a chef's guide to commissioning a custom shape.

Talk to the makers
