Golden Whisper

Warm ivory across the body, with an amber glaze that gathers at every rim and runs back down the wall in fine threads. Thrown rings left visible in the wells, petal and pebble outlines at the edges, and no two rims breaking the same way.

The glaze

Ivory, and amber at the edge

A quiet ivory that reads warm rather than white, laid over a body left slightly sandy so the light catches it. The interest is all at the edge: iron in the glaze collects where it thins over a rim and fires to amber, then dark bronze where it pools thickest, and runs back down the inside wall in fine threads.

The wells keep the marks of the wheel — concentric rings you can see and feel — and the outlines are pulled off round into petal and pebble shapes. Every rim breaks differently, which is the point.

What it flatters

Raw and barely cooked things: crudo, tartare, scallop, cured fish. Saffron, aji, turmeric and egg yolk sit inside the same family as the rim.

Contrast that works

Red, pink and deep green stand out hardest. Cream sauces and pale purées disappear into the ivory, so give them a dark garnish or a bright oil.

Building a table

The warmest neutral in the range, and the one that carries a whole service on its own. The footed pieces give height on a table of flat plates.

On the flat plate

Scallop Tiradito, Aji Amarillo

Serves 2 · 20 minutes

8 large scallops, very fresh · 2 tbsp aji amarillo paste · juice of 3 limes · 1 small clove garlic · 20ml single cream or a spoon of coconut milk · 100g cooked corn kernels · 1 red chilli · coriander leaves · 2 tbsp herb oil · flaky salt

  1. Blend the aji amarillo with the lime juice, garlic, cream and a good pinch of salt until smooth. Chill it hard.
  2. Slice each scallop across into two or three discs and keep them cold on a plate.
  3. Pour the sauce in a broad crescent across the plate, following the rings in the well.
  4. Lay the scallop discs along the crescent so they overlap slightly.
  5. Scatter corn, thin chilli rings and coriander over the fish, and dot herb oil into the sauce. Salt the scallops just before it goes.

Yellow aji against ivory is the same warmth as the amber rim, so the plate frames the sauce instead of competing with it. A crescent leaves the throwing rings visible.

In the shallow bowl

Beef Tartare, Radish & Crisp Shallot

Serves 2 · 30 minutes

300g beef fillet or rump, well trimmed · 1 shallot, finely diced · 1 tsp Dijon · 1 tsp capers, chopped · dash of Worcestershire · 4 breakfast radishes · 4 asparagus spears · 1 banana shallot for frying · flour and oil · chive oil or good olive oil · sea salt and pepper

  1. Chill the beef until firm, then hand-chop it fine. Fold through the diced shallot, Dijon, capers, Worcestershire, salt and plenty of pepper. Keep it cold.
  2. Fry the sliced banana shallot in floured rings until pale gold and drain on a rack.
  3. Shave the radishes thin and blanch the asparagus tips for thirty seconds, then refresh.
  4. Ring the tartare into a low disc in the centre of the bowl and press it lightly flat.
  5. Layer radish and asparagus over the top, crown with fried shallot, and spoon the oil around the base so it pools in the well.

The bowl's low wall holds the oil in a ring round the tartare, and raw beef is the strongest contrast the ivory takes. Fried shallot echoes the amber rim.
